The sunken, covered containers keep the ice cream at a constant temperature, preventing thawing and later recrystallization so it remains in optimal serving condition.
Because it is covered, the ice cream is protected from light, air and oxidation, foreign particles cannot fall into it, and cross-contamination is also minimized.
